Mexican night

Serves: 4

Cooking Time: 0:15

Preparation Time: 0:30

Ingredients

  • 8 taco shells
  • 2 tbs olive oil
  • 500g beef mince
  • 1 small brown onion, finely diced
  • 2 tbs taco spice seasoning
  • 1 red onion, thinly sliced
  • ¼ cos lettuce, shredded
  • 2 tomatoes, halved and thinly sliced
  • 1 ½ cups grated cheese
  • Salsa, to serve
  • Sour cream, to serve
  • Guacamole, to serve
  • Lime wedges, to serve

Preparation

  1. Preheat the oven to 180C (160C fan-forced).
  2. Place taco shells on an oven tray and bake as per packet instructions.
  3. Meanwhile, place a large frypan over high heat and warm the olive oil. Add mince to the hot pan and cook for 3 minutes, stirring to break up pieces. Add the onion and taco seasoning and cook for a further 2-3 minutes. Season with salt and pepper.
  4. Serve the taco shells and mince alongside prepared vegetables and let the family build their own creation.

Tip – If you’d prefer chicken, swap the mince for chicken tenderloins. Roll the chicken in taco seasoning and cook in a frypan over medium heat for 4-5 minutes or until cooked through. Thinly slice.
