Baked Brie with Cherry Preserves and Sweet Rosemary Pecans

Ingredients

  • 1 round (16 oz) Brie cheese
  • 1/3 cup cherry preserves
  • 1 tablespoon butter
  • 2 tablespoons packed brown sugar
  • 1 tablespoon water
  • 1 cup pecan halves
  • 1 teaspoon chopped fresh rosemary leaves
  • Dash salt and pepper

Preparation

  1. Heat oven to 350°F. Remove rind from top of Brie. Place Brie, cut side up on a Corelle dinner plate. Bake uncovered 10 minutes. Spoon preserves over top. Bake 5 minutes longer or until cheese is soft.
  2. Meanwhile, in 8-inch nonstick skillet, melt butter over medium heat. Add brown sugar and water; cook and stir until sugar is dissolved, about 30 seconds. Add pecans, rosemary, salt and pepper; cook 2 to 3 minutes, stirring constantly, until syrup thickens and most of syrup coats pecans.
  3. Spoon pecans and any remaining syrup mixture over Brie. Serve warm with assorted crackers or fruit on a CORELLE® DINNER PLATE.
